Peanut butter & chocolate chex mix
Muddy Buddies, Puppy Chow, Monkey Munch, Muddy Munch, Reindeer Chow…there are so many different names for this popular snack. Simple to make using peanut butter, chocolate chips, icing sugar and Chex cereal it seems no one can resist eating it by the handfuls.
Last summer friends of mine joined me at my cottage for a retreat. One of the ladies made a huge bowl of this mix and after tasting a piece, I pretty much took over the bowl and licked it clean. I requested the recipe and two of the women sent me their recipes, each version slightly different.
My first batch was a bust and what should have been fluffy individually coated pieces came out in clumps. After grilling the ladies on their techniques (which were quite different) and several attempts later, I made the perfect batch. Each piece was filled with ooey gooey peanut butter and chocolate and was lightly dusted with icing sugar on the outside. When you bite into these bad boys, the peanut butter-chocolate mixture oozes from the center and has an icing sugar coating so the sticky filling doesn’t get all over your hands.
My daughter got her hands on the recipe and is now our resident Chex-Mix-maker. She can whip up a batch in 15 minutes but it only lasts about the same amount of time as everyone descends on her treats. Here is my perfected recipe for everyone to enjoy.
For the Chex Mix
5 cups of Rice Chex Mix
1 cup of chocolate chips
1/2 cup peanut butter
1/2-1 cup icing sugar
In a large bowl add Chex cereal. Set aside.
In a large ziplock bag, grocery bag or green bin bag, add 1/2 cup icing sugar and set aside.
Place chocolate chips and peanut butter in a microwave-safe bowl and cook for 45 seconds. Mix and continue to cook in 30 second increments, stirring after each until peanut butter and chocolate are melted.
Pour peanut butter mixture over cereal and mix well to coat. Add mixture to bag with icing sugar, close and shake well. Add more icing sugar if cereal is not completely coated.
Pour into a bowl and serve! Will keep in an airtight container if there are any leftovers.
