Energy Bites

Looking for a quick and easy snack?  These energy bites should do the trick.  Easy to make, portable and slightly addictive, these snacks are a perfect start your day for breakfast, great as a boost before a workout, a good cure hungry kids after school or satisfying for a late night sweet craving.  Be creative and add your own personal touch to these by using different nuts, flax seeds, dates, maple syrup, protein powder for added protein - anything goes.  It’s time for you to get your energy bite groove on! 

For the mouth-popping peanut butter balls 

1 1/2 cup rolled oats

1/4 cup dark or semi-sweet mini chocolate chips

1/2 cup peanut butter  

1/3 cup honey

1 Tbsp chia or flax seeds (or both - rally anything goes) 

1 tsp vanilla extract

Add 1/2 cup oats to gods processor and process until fine.  Add remaining ingredients and mix to combine. 

Roll dough into 1-inch balls and place on lined baking tray.  Place in fridge for 30 minutes and voila!  So easy :) 

 

For the rich chocolate quasi-truffle balls  

1 1/2 cups old fashioned oats

1/2 cup peanut butter 

1/2 cup dark chocolate mini chocolate chips

1/4 cup cocoa powder

1 Tbsp chia seeds

1 Tbsp honey

1 Tbsp water  

in food processor grind oats until fine.  Add remaining ingredients and mix to combine. 

Roll dough into 1-inch balls and place on lined baking tray.  Place in fridge for 30 minutes.  Store covered in fridge for up to 2 weeks.
