I love a good classic, mayo-based potato salad.  At a gourmet food store down the way from me they sell an amazing potato salad but I only indulge in it on special occasions because it is so expensive!!! I have a love-hate relationship with their salad because it's so yummy but I can't get over what they charge for it because it's just potatoes!  

Of course I had to figure out a way to have this potato salad at home, made by me, anytime, at a fraction of the cost.  And I did...and it's so easy...and it's so delicious I can't believe I wasted so much money buying that darn potato salad in the first place.  

You can elevate the standard potato salad using purple potatoes as pictured above, using a combination of red, Yukon and purple for a festive salad (think red white and blue) or go classic with a simple Yukon gold potato salad.  It doesn't matter what you use, the end result is a potato salad worthy of any barbecue, picnic or quite frankly any meal at all.

For the potato salad 

8 purple, red or Yukon gold potatoes, or a mixture of any, steamed, and diced (I like to peel my potatoes if I'm using Yukon golds)

2 celery stalks, ends removed, minced

1 large onion, minced

4 hard boiled eggs, diced

1-2 Tbsp parsley, chopped

 

For the dressing   

1 1/2 cups mayonnaise

2 Tbsp cider vinegar

2 Tbsp sugar

1 Tbsp yellow mustard

1 tsp garlic powder

1 tsp salt

Mix all dressing ingredients together in a large bowl.  Add potatoes, celery and onion and mix well to coat.  Add eggs and toss gently to combine.  Sprinkle with parsley and serve.
