The Stop's Peach and Avocado Salsa
A friend of mine volunteers at a community food bank called The Stop Community Food Centre. This week she was given a delicious recipe for peach salsa and was so excited about it she had to share it with me.
I just happened to have all the ingredients in my fridge and was trying to sort out what to make with my few peaches left from last week's farmers market, so I whipped up this quick recipe. The combination of flavours, colours and textures were bang on. I served it up with some teriyaki cod and steamed rice but this morning read a post for a pulled chicken taco with peach salsa that I'm definitely going to have to try.

For the salsa*
2 peaches, peeled, pitted and diced
1 avocado, pitted and diced
3 tomatoes, seeded
1/4 of a red bell pepper
1 jalapeño, seeded, ribs removed and minced
3 Tbsp cilantro, chopped
2 Tbsp red onion, finely diced
In a medium bowl, combine the peaches, avocado, tomatoes, bell pepper, jalapeño, cilantro and red onion.
Pour dressing over and mix. Let the salsa sit in refrigerator for at least 30 minutes to let the flavours intensify.
For the dressing
2 Tbsp fresh lime juice
2 cloves garlic, minced
3 Tbsp olive oil
1 tsp kosher salt
In a small bowl combine the lime juice, garlic, olive oil and salt. Set aside to pour over the fruit and vegetable mixture.
Enjoy alongside chicken or fish or serve it with your favourite tortilla chips as a great snack.
