Quick Pulled Chicken Tacos

Here's a cheater recipe for super-quick chicken tacos.  These are great for a last-minute meal.  Grab yourself a BBQ chicken from your local deli and you're good to go!

 

For the chicken:

 

1 BBQ chicken prepared from your local deli counter

bottled smoky BBQ sauce

 

Remove chicken meat from bones and discard skin and bones.  With two forks pull apart the chicken meat.   In a medium saucepan bring 1/4 cup water to boil and add 1/4 cup BBQ sauce.  Reduce to simmer and let thicken slightly.  Add chicken and cook until warmed through.

 

For the tacos

12 mini flour tortillas

2 avocados, pitted and sliced

2 limes,  quartered

1 recipe cilantro lime crema (see tuna taco blog post)

1/2 cup queso fresco, crumbled 

1/2 cup chopped cilantro  

 

To assemble: 

Heat a medium frying pan over medium-high.   Add the tortillas 4 at a time and cook 1 minute or until lightly browned.  Flip and repeat on the other side.  Continue to heat the remaining tortillas while you assemble the tacos.

evenly divide the chicken over the tortillas.  Top with avocado and lime crema.  Sprinkle queso fresco and cilantro.  Serve with lime wedges.  Voila!  Quick-pulled chicken tacos.
