French Toast Casserole with Maple Caramel Topping

 

This casserole is the easiest most impressive brunch dish that never seems to disappoint.  I always have requests following a brunch for the recipe of this beauty.  It is so simple to make which is why it makes repeat performances at many of our bunch meals.  You simply throw the ingredients together the night before so you don't have the hassle of preparing it in the morning.  Just before you are ready to bake it you drizzle the delicious sweet maple-caramel topping on it, put it in the oven and watch as the topping bubbles and turns gooey.  (Insert drool here) so scrumptious!

For the casserole

1 day-old loaf of Challah, cut into 1-inch cubes

7 eggs, beaten

2 1/2 cups whole milk

1 tsp vanilla

For the topping

1 stick butter, melted

1 cup brown sugar

2 Tbsp pure maple syrup

In a large bowl, combine eggs, milk and vanilla and mix well.  Add Challah cubes, toss to coat and place in refrigerator overnight.

When ready to bake, prepare topping by combining the melted butter, sugar and maple syrup.  Coat a 9x13" casserole dish with baking spray or butter.  Spread challah mixture over bottom of prepared dish.  Pour topping mixture evenly over top.  Bake at 350F for 45 minutes.   Let cool 5 minutes before serving.
