Omi's Pound Cake

Historically pound cake called for a pound each of butter, eggs, flour and sugar; hence the name pound cake.  This recipe still has these main ingredients but has been pared down in size to fit the cake pan it is baked in.

Topped simply with bittersweet or semi-sweet chocolate melted with milk and a touch of butter, this dessert makes for a dense, rich dreamy dessert...or breakfast...or snack - I think you get where I'm going with this one.  Enjoy!

For the cake

3/4 lb unsalted butter

1 1/2 cups sugar

6 eggs

1 tsp vanilla

2 cups flour

Preheat oven to 350F.  Cream butter for at least 5 minutes.  Add sugar and cream together well. Add eggs one at a time. Add vanilla and continue beating.  Fold in the flour and pour batter into buttered loaf pan.  Bake at 350F for one hour.

For the icing

3 oz bittersweet chocoate

3 Tbsp milk

1 tsp butter

Melt chocolate and milk in double boiler.  When it becomes liquid, add butter.  Stir well until smooth.  Remove from heat.  Ice cake with pastry brush once cake is cooked
