French fry potato salad

For the dressing

1/2 cup Greek yogurt

1/4 cup red onion

1/4 cup chopped pickle

3 tbsp spring onion white and green thinly sliced

2 tbsp dill

2 tbsp light mayonnaise

1 Tbsp yellow mustard

1/2 lemon juiced

Kosher salt and fresh ground pepper to taste

Combine all ingredients in a bowl and mix well

For the potatoes

255g frozen fries, cooked and chopped into bite sized pieces - I like waffle fries so the dressing gets in the nooks and crannies

Add potatoes to bowl with dressing and toss well. Enjoy!
