Simple strawberry ice cream
I scream, you scream…
After a good haul of strawberries from our annual strawberry picking trip, I made my customary jam for the year ahead and still had leftovers. After researching strawberry recipes I landed on ice cream - my favourite summer treat.
My kids don’t like chunks in their ice cream so I puréed the strawberries and feeling lazy I decided to skip the custard I usually make for ice cream and hoped for the best. Turned out to be such a magical, nostalgic recipe I had to share. It’s reminiscent of the simpler days when my family would summer at the cottage and go into town to the local ice cream shop for a treat - sigh.

For the Ice Cream
1 1/2 cups fresh strawberries, hulled
2 Tbsp honey
1/2 cup white sugar
1 tsp lemon juice
1 cup heavy cream
1/2 cup half & half
1 tsp vanilla extract
In a large bowl add strawberries, honey sugar and lemon juice. Mix together and let sit until strawberries release their juices, approximately 15 minutes. Purée mixture to desired consistency. (Alternatively if you prefer your ice cream with chunks of strawberry simply mash with a potato masher or fork to desired consistency).
Add cream, half & half, and vanilla extract and mix well to combine.
Process according to the manufacturer's directions. Once mixture is frozen, transfer ice cream to an airtight container and freeze for at least 1 hour before serving.
