BRUNCH DEVILED EGGS

Bagels, lox, cream cheese and eggs?? Yup, these eggs have it all. A creamy yolk mixed with mayo and cream cheese surrounded by your favourite bagel and egg toppings all sitting on top of a crisp toasted bagel chip. These ones have lox, capers and pickled onions but try your hand at a BLT version using crumbled, crispy bacon, diced tomatoes and shredded lettuce, make them straight up with stand alone eggs or let your creative side take over and use your favourite toppings.

For the eggs

6 large hard boiled eggs, cooled, peeled and cut in half lengthwise

1 oz smoked salmon, cut into 12 thin slices

1/4 cup mayonnaise

2 Tbsp cream cheese, softened

1 large bagel (poppy, sesame or your favourite)

Toppings:

12 capers, drained

Pickled onions (see recipe for Quick-Pickled Onions on the blog)

Everything bagel seasoning (see recipe below)


Slice bagel into rounds, 1/4” thick. Place in toaster and toast until browned. Remove from toaster and transfer 12 slices to serving plate.

Meanwhile, remove yolks from egg-halves and place in a small bowl. Add mayonnaise and softened cream cheese and mix well. Adjust mixture with additional mayo, salt and pepper to taste.


Transfer the mixture to a piping bag fitted with a star-shaped icing tip or if you don’t have a piping bag, place filling in a ziplock bag, push the filling to one corner and snip off a corner.

Top each toasted bagel slice with an egg half. Fill the hollowed-out egg whites with filling.

Top each egg with a slice of lox, a caper, a slice of pickled onion and sprinkle with seasoning. Serve immediately or refrigerate until ready to serve.

Everything Bagel Seasoning

2 Tbsp poppy seeds

1 Tbsp white sesame seeds

1 Tbsp black sesame seeds

1 Tbsp plus 1 tsp dried minced garlic

1 Tbsp plus 1 tsp dried minced onion

2 tsp kosher salt

Mix all together in an air-tight container. Shake well to combine seasonings. Use to top your eggs, avocado toast, favourite rice dish - the options are endless!
